- We all buy, cook, eat, and taste food. While food has caused violent wars, countries colonized, people enslaved, it also has profound capacity to preserve memories, sustain communities, establish cultural identities, and forge alliances. Yet, most of us seldom pay attention to these complex histories and journeys our food has gone through and continues to reveal, and we are rarely conscious of how deeply food and politics are entangled. Addressing this gap, this class primarily enables students to critically engage with food as a commodity and a historical document and provoke them not to think of food as a banal and flat entity. Focusing on different food-related products and popular dishes from several countries and regions in Asia, this class further teaches students to analyze food's unique presence in literary and cultural texts across ages. Students are required to engage with historical documents/essays, recipe books, literary texts, and a few visual materials to learn in what ways issues like nationalism, (anti)racism, human rights, politics of gender, and environmental sustainability are deeply connected with every bite they take.
