Course Catalog Description:: Overview This course explores a potential theory of gradually changing the food system to better include meaningful and relevant practical, healthy, affordable, desirable (PHAD) foods that will enhance the nutrition of the general population and ultimately enhance public health. We will foster essential leadership qualities, skills, and knowledge to work toward collective solutions around adaptive challenges. We will create a valid, reliable, and sustainable process for the development of practical, healthier, affordable, and desirable foods.
